Restaurant da Delfina
If you are lucky, you might see Delfina
from whom the restaurant takes its name,
shelling beans or walking back from the
woods with a basket of wild mushrooms, nettles
or herbs to be used for the day’s
cooking. The Ristorante da Delfina can be
counted among Florence’s treasures

culinary paradise. Just outside the medieval
walled village of Artimino, Da Delfina is
located on the Via della Chiesa and is just
15 minutes by train from Florence and Signa.
Da Delfina gives you the essence of traditional

at the restaurant are a local delicacy and
the meat and fish are home-cured and grilled
over the giant wood fireplace in the kitchen.

son Carlo Cioni, his wife, Franca, and their
son, Marco, catering to the guests and dishing
up awesome Tuscan delicacies with marvelous
service and courtesy. Before you can absorb
the wild countryside and its wonders, you
will be served a succulent dish of fresh
fennel salami. As the palate drifts into
a dream-like state, mild pecorino sheep’s
milk cheese with tender fava beans follows
to give you a taste of paradise. Da Delfina
chooses the best to give you a true Tuscan
experience with tongue in sweet sauce and
zucchini salad with pine nuts. Typical Italian
recipes are concocted out of thin air and
the Ribollita gives you the essence of nourishment.
Touching up a perfect repertoire, the Risotto
with Garden Vegetables gives the season’s
best and the freshest.
Unusual and lovely, Da Delfina gives you
a rare taste of Nature with the Pasticcio,
a rich concoction with nettles or ortica,
pasta, herbs and béchamel sauce.
The Primi or the first course comes with
Pappardelle al pomodoro, farro soup, profume
of artichokes and bacon and taglierini with
wild asparagus. A popular dish of Tuscany
is served as the Secondi with Frito misto
that is roast goat and lamb cutlets. An
all-time favorite at Da Delfina’s,
is a fantastic dish of delicious pork cubes
with fennel, cooked on the spit over the
wood fire in the Da Delfina kitchen. Another
show stealer is the mashed potatoes that
are mashed and browned with olive oil, being
crisp on the outside and soft, creamy and
tender on the inside.
Right next to the lovely big Medici hunting
lodge, Da Delfina is a modern red brick
building with picture windows and a huge
terrace overlooking olive groves, where
it is safe and perfect for children to play
in. The restaurant has a big glassed-in
kitchen from where you can se ladies in
white hats working away on delicacies in
a stainless-steel kitchen. Da Delfina offers
you a journey into the wild forests and
woodlands with a variety of awesome dishes
like pasta with a nettle sauce, salads from
the wild flowers that grow around the restaurant
in June and July, and artichokes marinated
in olive oil, wine and herbs. Giving you
a replete and satisfying experience, Da
Delfina has a never-ending wine list with
international and national wines including
a 1998 vintage Tuscan Carmignano from the
House of Ambra, a unique red wine made with
Chianti grapes tempered with a dash of Cabernet,
and the Chianti Classico from Castello di
Fonterutoli, of the 1997 vintage. Serving
up taste with aesthetics, Da Delfina has
an amazing repertoire of cheese and a fascinating
array of desserts. Every dish at Da Delfina’s
is a work of art that is so typical of Tuscan
talent.
